Ingredients:

  • 1 1/3 cups sugar
  • 1 tsp vanilla
  • 4 cups flour
  • 1/2 cup sugar
  • 2 tsp vanilla
  • 2 eggs
  • 4 apples, cored, peeled and slices (tart apples work best)
  • 2/3 cup sugar
  • 2 tsp cinnamon
  • 1/2 tsp lemon juice

Directions:

  1. Crust: cream butter and sugar, add vanilla and mix well.
  2. Add flour and blend with your hand till crumbly.
  3. Press into the bottom and 3/4 up the sides of 2 9 inch springform pans.
  4. Filling: beat cream cheese and sugar, add vanilla.
  5. Add eggs one at a time, beating well after each egg.
  6. Pour half into each crust.
  7. Topping: Mix apples cinnamon and lemon juice.
  8. Lay apples on top on cheese mixture in a curcular pattern, and inside and outside row.
  9. Top with almonds.
  10. Bake at 350 for 45 minutes to an hour.
  11. Cool on wire rack for 1 hour.
  12. Remove from pan and refrigerate over night.
