Ingredients:

Directions:

  1. Melt butter in a large saucepan over medium heat then add onions and cook until pale.
  2. Add curry powder and cook while continuously stirring.
  3. After 2 minutes add broth, apples and 1/4 teaspoon salt then bring to boil.
  4. Reduce heat to medium low and simmer stirring often for 45 minutes.
  5. Take saucepan off stove and allow soup to cool then put it into the refrigerator.
  6. After soup cools transfer in batches to a blender and blend until very smooth.
  7. Run the blended soup through a strainer then whisk in the lemon juice.
  8. Add yogurt and cayenne then put in refrigerator for at least one hour then serve cold.
