Apple Ricotta Struesel Cake

Ingredients:

  • 1 3/4 cup flour
  • 3/4 tsp bk powder
  • 1/2 tsp bk soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 1 tsp, vanilla
  • 2 eggs
  • 1 cup ricotta
  • 2/3 cup brown sugar
  • 1/2 cup flour
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 4 tbsp. butter cut in small pieces
  • 2 tlbs. crisco cut in small pieces
  • 1/2 cup pecans

Directions:

  1. Mix flour,bk powder, bk soda,salt into bowl
  2. In another bowl using electric mixer beat butter,then add sugar and vanilla for 30 seconds
  3. Add eggs one at a time beating after each addition
  4. Alternately add flour mixture and cheese to batter mix on low speed
  5. Batter will be thick and stiff
  6. Spread 1/2 batter in pan ,sprinkle 1/2 of streusel, then apples
  7. Then spread rest of batter,use back of spoon to spread
  8. Sprinkle rest of streusel and nuts on top
  9. Bake 350 degress 45 minutes
  10. Cool at least 1 hour
