Amish Citrus Muffins

Ingredients:

  • 1 cup sugar
  • 1/4 cup margarine
  • 2 eggs
  • 2 cups flour
  • 1/4 tsp salt
  • 2 cups fresh or frozen cranberries , coarsley chopped

Directions:

  1. Preheat oven to 350 degrees. grease muffins tins
  2. Beat sugar and margarine together in a medium mixing bowl. until lightly and fluffy.
  3. Add eggs, one at a time, beating after each addition
  4. Combine flour, powder and salt in a separate bowl. add this alternately with the juice to the egg mixture. stir in cranberries.
  5. Spoon into muffin cups, filling 3/4 full.
  6. Bake 20 minutes or until golden brown.
  7. Makes 12 muffins
