Easy citrus muffiins
Ingredients:
1 cup sugar
1/4 cup margarine
2 eggs
2 cups flour
2 tsp baking powder
1/4 tsp salt
1/2 cup grapefruit juice
2 cups fresh or frozen cranberries, coarsley chopped
Directions:
1. preheat oven to 350 degrees. grease muffins tins
2. beat sugar and margarine together in a medium mixing bowl. until lightly and fluffy.
3. add eggs, one at a time, beating after each addition
4. combine flour, powder and salt in a separate bowl. add this alternately with the juice to the egg mixture. stir in cranberries.
5. spoon into muffin cups, filling 3/4 full.
6. bake 20 minutes or until golden brown.
7. makes 12 muffins
