Ingredients:

  • 2 tbsp flax seeds (grind flaxseeds in coffee grinder)
  • 1 egg
  • 1/4 cup water
  • 1 tbsp butter
  • 1 tsp honey
  • 1/4 cup blueberries or 1/4 cup raspberries or 1/4 cup strawberry

Directions:

  1. Heat lightly greased frying pan on medium heat.
  2. A cast iron pan is preferred.
  3. In small bowl, mix amaranth flour and flax seed meal.
  4. Add egg to flour mixture.
  5. Beat with whisk until well blended.
  6. Add small amount of water to egg mixture then beat.
  7. Do this several times until the batter is thick, yet not runny.
  8. Pour batter into heated pan.
  9. Cover with glass lid.
  10. Flip after bubbles have formed.
  11. This will take approximately one minute.
  12. Cook for another one or two minutes.
  13. Place on plate.
  14. Allow butter to melt on pancake.
  15. Then drizzle honey over pancake.
  16. Add fruit and enjoy!
