Amanda's  Potato Quiche

Ingredients:

  • 1 1/2 cups potato
  • 1/2 cup green pepper
  • 1/4 cup scallion
  • 3/4 cup light cheese
  • 1/2 cup skim milk
  • 2 large whole eggs
  • 4 large egg whites
  • 1/4 cup cilantro

Directions:

  1. Spray a round pie dish with non-stick spray
  2. Mix frozen potato hash browns or fresh grated poatoes (be sure to strain the liquid first if you use fresh) and mix with one egg
  3. Place potato and egg mixture in your prepared baking dish and pre-bake until golden in a 375 degree oven
  4. Mix 1 whole egg and 4 egg whites until fluffy and add peppers, cilantro, and scallions. along with any spices you'd like
  5. Mix in milk and cheese until blended
  6. Remove potatoes when done and add your egg,vegetable,cheese mixture to the potato crust
  7. Bake until it does not jiggle or a knife comes out clean about 20-30 min.
