Ingredients:

Directions:

  1. In a medium bowl combine vinegar, cilantro, 1/2 tsp.
  2. Salt, and sugar.
  3. Slowly whisk in the 2 Tblsp.
  4. Of oil.
  5. Set this aside.
  6. Heat the remainder 2 tsp.
  7. Oil in medium skillet over medium heat add the next 3 ingredients and remaining 1/3 tsp salt.
  8. Cook 2-4 min.
  9. Or until opaque.
  10. Combine with dressing and the greens.
  11. Toss well to coat then top your salad with the Feta Cheese and Serve-.
