Ingredients:

  • 2 cups flour
  • 2 cups buttermilk
  • 2 tsp sugar
  • 1 tsp salt

Directions:

  1. In a medium bowl beat the egg whites to stiff peaks form, set aside.
  2. In a large bowl beat yolks and sugar until well blended.
  3. Add all remaining ingredients except whites and beat until smooth.
  4. Fold in whites until well blended.
  5. Heat your greased aebleskiver pan over medium heat.
  6. Its ready when drops of water sizzle.
  7. Fill each cup with about 1 T.
  8. Of batter.
  9. Cook 2 to 3 minutes on one side, flip and cook 2 to 3 minutes on the other.
  10. Both sides should be golden brown and a toothpick inserted into the middle comes out clean.
  11. Roll in powdered sugar and serve with jam if desired.
