Ingredients:

  1. Place couscous in a small mixing bowl. Set aside.
  2. Bring apple juice to a boil in a small saucepan & pour over the
  3. Couscous. Cover & set aside until the juice is absorbed. This will
  4. Take 15 minutes.
  5. Stir in the fruit, apple juice concentrate, cardamom and maple syrup.
  6. Set aside.
  7. Steam squash halves until tender, about 15 minutes. Drain & place on a
  8. Baking sheet.
  9. Preheat oven to 350°F Fill squash halves with the
  10. Couscous mixture & bake for 20 minutes. Top with pecans & serve.
