Ingredients:

  1. - Either boil, peel and chop chestnuts or use already prepared chestnuts now available in most stores at holiday time.
  2. - Fry celery and onion in margarine in a large frying pan. Add sausage meat and fry until meat is cooked. Add poultry seasoning to meat mixture.
  3. -Either slice, toast and chop stuffing bread or use pre toasted and chopped stuffing bread provided it does not contain seasoning. I use Matins potato bread cubes which are usually available around the holidays.
  4. - Put meat mixture into a large bowl. Add stuffing bread, chestnuts and egg and mix. Use stock to wet the mixture as needed. Mix with hands to combine ingredients similar to mixing meatball mix.
  5. Stuff turkey or bake in separate pan.
