Zucchini Walnut Spiced Bread

Ingredients:

Directions:

  1. Preheat oven to 325.
  2. Butter and flour 2 8 loaf pans.
  3. Whisk the first 6 ingredients in a bowl.
  4. In another bowl whisk together sugar, oil, eggs, vanilla, zest, blend well.
  5. Add dry ingredients to egg mixture.
  6. Whisk in zucchini and walnuts.
  7. Pour into pans, bake about 1 hour, 15 minutes until toothpick inserted in center comes out clean.
  8. Let cool for 10 minutes then turn out to a rack to cool completely.
