Zucchini Walnut Spiced Bread

great for using up the surplus zucchini, from bon appetit.
Ingredients:
2 cups flour
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon allspice
1/2 teaspoon baking powder
2 1/2 cups sugar
1 1/2 cups vegetable oil
3 eggs
1 tablespoon vanilla extract
2 teaspoons grated lemons, zest of
2 cups grated zucchini
1 cup walnuts, toasted and chopped (4 oz)
Directions:
1. preheat oven to 325.
2. butter and flour 2 8 loaf pans.
3. whisk the first 6 ingredients in a bowl.
4. in another bowl whisk together sugar, oil, eggs, vanilla, zest, blend well.
5. add dry ingredients to egg mixture.
6. whisk in zucchini and walnuts.
7. pour into pans, bake about 1 hour, 15 minutes until toothpick inserted in center comes out clean.
8. let cool for 10 minutes then turn out to a rack to cool completely.
