Ingredients:

Directions:

  1. Add dash olive oil to a medium saucepan over medium heat on stove
  2. Add red onion and sautee till softening
  3. Add garlic, crank up the heat, stirring for a minute or so
  4. Add wine, and then tinned tomato after wine comes to boil, turn down heat to simmer
  5. Add zucchini and chopped basil, cover and simmer for a couple of minutes*
  6. Remove lid and reduce liquid over high heat for a few minutes
  7. Add seasoning to taste
  8. Serve with whatever you like. It works well with sauteed lamb fillet (slice and fry in a little olive oil with garlic, sage and oregano)
  9. * - ignore the simmer in this step if you like firmer veggies!
