Ingredients:

  1. Preheat oven to 350 degrees. In a medium mixing bowl cream together first four ingredients and set aside.
  2. Sift together until well mixed.
  3. Flour, cinnamon, baking soda, baking powder, and salt. Stir in zucchini then add liquid mixture. Stir in nuts and spoon into well greased (hint, if you pan spray then also lightly dust the pan with flour, it almost guarantees that it won't stick) loaf pans.
  4. Bake on center rack for 55 minute or until knife comes out clean.
  5. Allow to cool most of the way before cutting, but it is good slightly warm. You get a better flavor if it is not hot. It is good spread with butter or cream cheese.
