Ingredients:

  • 3 eggs
  • 2 cups sugar
  • 1 cup canola oil
  • 2 cups flour
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1 cup walnuts

Directions:

  1. Preheat oven to 350 degrees.
  2. Beat 3 eggs until frothy.
  3. Beat together sugar, oil and vanilla until thick and lemon colored.
  4. Stir in the zucchini.
  5. Mix together and add flour, cinnamon, baking soda, salt and baking powder.
  6. Fold in walnuts.
  7. Pour into 2 oiled and floured loaf pans and bake for one hour.
