Ingredients:

Directions:

  1. Slice zucchini in half long and clean out the seeds and soft insides with a spoon - leaving a shell at least 1/2 inch thick on all sides. They will look like canoes when cleaned.
  2. Chop the seeds, etc., and mix well with feta, onion, dried spices, and olive oil, leaving salsa-sized chunks of feta. You may use a food processor but be sure not to over-mix as this creates an unpleasant consistency.
  3. Coat both sides of zucchini with butter-flavored no-stick cooking spray (like Pam).
  4. Spoon the mixture into the zucchini shells and place directly on the grill - medium heat.
  5. Grill for about 12 minutes or until the shells are tender.
  6. For presentation you may garnish with fresh herbs. Mangiamo!
