Ingredients:

  • 5 eggs
  • 2/3 cup of cooking oil
  • 1 tsp. onion powdert (i use 2 tsp.)
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 and 1/4 cup chopped onion
  • 3 and 3/4 cups grated zucchini (unpeeled )
  • 1 and 1/4 cups tea biscuit mix

Directions:

  1. Beat eggs in mixing bowl until frothy
  2. Mix in cooking oil, parsley, onion powder, salt and pepper
  3. Stir in remainiing ingredients in order given
  4. Pour into a shallow greased 9 inch casserole.
  5. Bake at 350 for about 35 minutes
  6. Serve hot with a side dish of salsa
