Ingredients:

Directions:

  1. Preheat oven to 425°.
  2. Trim zucchini and cut into 3/8-1/2 thick slices, place the pieces into a small baking dish and brush with chicken broth.
  3. Bake 12 minutes, or until almost tender.
  4. Remove from oven but leave oven on.
  5. Place a slice of tomato on each zucchini slice. Combine bread crumbs with cheese and basil in small bowl. Return to oven and bake 5-6 minutes, until crumbs are lightly browned.
