  1. After a delicious boneless leg of lamb roast, take the leftover, as much as you care to add. Pour your Broth Mixture into a large pot and simmer over medium heat. Add lamb to the broth for about 15 minutes. Remove lamb and Cut into thick slices and then cube into chunks fitting for a stew. Add the Lamb and the sweet potato into the broth.
  2. In a non stick pan, add your onion and mushroom with a little olive oil, wait until the onions start to give out there flavour and add the garlic. After 2 minutes add your red wine and beef broth, and let it simmer on low heat until it all mixes nicely, stiring regularly.
  3. Add your beans and carrots,and mushrooms to the mix now.
  4. Simmer on low-medium heat for about 30 minutes.
  5. For a twist i like to add curry, and a little chopped cilantro and mint. and some fresh lemon juice.
