Ingredients:

Directions:

  1. Cut the potatoes into 1 inch pieces, leaving the skin on.
  2. Boil in salted water until very tender
  3. Drain-leaving a tiny bit of water in the pot.
  4. Chop the scallions and add to the pot
  5. Add the butter and mash in the warm pot with a potato masher.
  6. If necessary, add a splash of chicken stock to smooth the consistency of the potatoes (if you don't have stock on hand you can just leave more salted water in the pot).
  7. Add cracked pepper to taste and stir.
  8. Serve warm.
