Ingredients:

Directions:

  1. Steam string beans with brocolli.
  2. Bring peas to the boil.
  3. Whilst peas, beans & brocolli are cooking:.
  4. Saute onion until soft, in olive oil,.
  5. Add shiitake and shredded carrot & parsnip to onion.
  6. Saute until all ingredients are soft.
  7. For the dressing:.
  8. Mix.
  9. 1 tbsp dijon musturd.
  10. 1.5 tbsp balsamic vinegar.
  11. 1.5 tbsp lemon juice.
  12. 1/4 cup sesame oil.
  13. 3 tbsp soy sauce.
  14. & finely chopped mint .
  15. When all the vegetables are cooked:.
  16. Mix rice thoroughly with the dressing.
  17. Add peas and stir.
  18. Add onions, mushroom, parsley & carrot mixture - and stir.
  19. Serve in two bowls topped with the string beans & brocolli.
  20. Pour a large glass of red wine & enjoy.
