  1. Whisk dry ingredients in a large bowl (8 oz or 2 cups spelt), wheat bran, sea salt, baking soda, baking powder.
  2. In a seperate bowl whisk Greek yogurt, stevia, honey, water, egg whites, brown sugar extract, and melted coconut oil. Make sure to whisk everything together before adding coconut oil so that the oil doesn't cook the egg whites. You may sub a light olive oil, melted butter, or vegetable oil for the coconut.
  3. Gently fold the wet into dry, adding 3/4 cups dried fruit or nuts of your choice. Allow batter to rest for 15 minutes as you preheat oven to 350. Lightly spritz muffin tins with oil and fill. Bake for 15 minutes.
