White Chocolate Macadamia Nut Cupcakes

Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Line muffin tin with 20 baking cups
  3. Prepare cake mix according to box, mixing in pudding mix
  4. Fold in Nuts
  5. Spoon into muffin cups, filling 2/3 full
  6. Bake 18-20 minutes
  7. Cool cupcakes on wire rack
  8. Spread coconut on baking sheet and toast at 350 degrees for about 6 minutes until golden brown. Cool slightly.
  9. Microwave chocolate chips until melted, usually takes about 2 minutes stirring every 30 seconds
  10. Mix melted white chocolate chips into frosting
  11. Frost cupcakes and top with toasted coconut
