White Cheddar Parsnips and Potatoes

Ingredients:

Directions:

  1. Peel parsnips and potatoes and cut into small pieces.
  2. Combine in a deep saucepan, cover with water and cook until tender.
  3. Drain.
  4. Whip potatoes and parsnips with cream and butter to the consistency of mashed potatoes.
  5. Season with nutmeg, salt and pepper.
  6. Butter a 9 by 13 inch dish.
  7. Layer the bottom with half the potato parsnip mixture and top with half the grated cheese.
  8. Repeat, finishing with remaining cheese on top.
  9. Dot with butter.
  10. Bake in a 350*F oven for 15 to 20 minutes, or until hot.
