Ingredients:

  • 1 1/2 tbsp balsamic vinegar
  • 3- 16oz cannelloni beans drained saving 1/2 cup of liquid
  • 3- 16oz cannelloni beans drained saving 1/2 cup of liquid
  • 3 pint cherry tomatoes
  • 4 clove garlic sliced
  • 3 tbsp olive oil
  • 2 1/2 lb sweet saqusage cut into 2-3 pieces

Directions:

  1. Mix all ingredients in roasting pan EXCEPT BEANS AND LIQUID, roast for 1 hour. Remove from oven and add beans and liquid cook 10 mins more. Remove bay leaves and serve.
  2. Also, can be:
  3. Eaten as is with bread
  4. Eaten over pasta
  5. Or add chicken stock and serve as soup
