Watermelon With Fresh Mint and Lime (Curtis Stone)

Ingredients:

Directions:

  1. Stir the sugar, 2 tbsp water, lime zest, and 1 1/2 tbsp lime juice together in a small heavy saucepan over high heat until the sugar dissolves and the syrup comes to a boil. Let cool completely, and then refrigerate until cold.
  2. Strain the chilled sryup into a small bowl and stir in the mint. Allow to infuse for at least 5 minutes.
  3. Pour cold syrup over watermelon chunks and serve.
