Ingredients:

Directions:

  1. Sprinkle gelatin over 1/4 cup cold water in a small bowl.
  2. Set aside to soften for about 5 minutes.
  3. In a small saucepan, combine sugar, salt and 1/4 cup water.
  4. Heat over high, stirring occasionally, just until sugar is dissolved.
  5. Stir in gelatin mixture until dissolved.
  6. Set aside.
  7. In a blender, combine lemon juice, and half of the watermelon chunks.
  8. Puree.
  9. Pour the pureed mixture through a fine meshed seive into a large bowl.
  10. Discard solids.
  11. You will need 3 cups of the puree.
  12. Stir gelatin mixture into the puree.
  13. Skim off any foam on the surface.
  14. Divide mixture into 6 serving cups.
  15. Cover and refrigerate until set, at least 3 hours.
  16. Serve, garnished with the diced watermelon.
