Ingredients:

  • 1 large egg
  • 1 large egg yolk
  • 1/2 cup caster sugar (4 oz)
  • 2 tbsp all-purpose flour , sifted
  • 1 1/4 cups chopped walnuts (5 oz)

Directions:

  1. Preheat oven to 315°F/160°C.
  2. Beat the egg, egg yolk, sugar and vanilla until well combined.
  3. Add the sifted flour and stir until smooth.
  4. Fold in the chopped walnuts.
  5. Using a teaspoon, drop dough mixture well apart onto parchment-lined baking tray.
  6. Flatten slightly with fork.
  7. Bake for 15-17 minutes (until golden and crisp).
  8. Allow to cool on trays.
