Vidalia Onion Chicken Casserole

Ingredients:

Directions:

  1. Cook broccoli according to package directions.
  2. Drain and set aside.
  3. Saute onions and mushrooms in 2 teaspoons of oil until softened.
  4. Drain and combine with broccoli.
  5. Set aside.
  6. Combine cheese, eggs, mayonnaise, water and rice.
  7. Set aside.
  8. Brown chicken breasts in 3 teaspoons of oil.
  9. To Assemble:
  10. Combine broccoli mixture with cheese mixture and pour into greased, shallow baking pan.
  11. Place chicken breasts on top and sprinkle with paprika.
  12. Bake uncovered in a 350 oven for 45 minutes.
  13. NOTE- You may cut fat and cholesterol from this recipe with the following substitutions:
  14. Light skim milk.
  15. 4 oz. of egg substitute for the 2 eggs.
  16. Light mayonnaise for regular mayonnaise
  17. Non-fat cooking spray for browning chicken.
