Sweet Italian Sausage and Vidalia Onion

Ingredients:

Directions:

  1. Heat olive oil on medium high heat in a large fryig pan.
  2. Remove sausage from casing and cut into 1/2 inch slices.
  3. Peel onion and slice in 1/4 inch slices.
  4. After heating oil in large fryinng pan, add italian sausage.
  5. Once the italian sausage is browned, add the onions and garlic.
  6. Cook until onions are transluccent.
  7. Add tomatoes, undrained.
  8. Add all spices and mix thoroughly - taking care not to break up sausage.
  9. Bring to a boil and turn down to medium low.
  10. Cover tightly.
  11. Wash squash
  12. Slice squash into 1/4 inch slices.
  13. Remove cover.
  14. Add squash into sauce and stir lightly.
  15. Replace cover.
  16. Turn down burner to low.
  17. Simmer for approximately 30 minutes.
  18. Serve over jasmine rice or pasta.
