Ingredients:

  • 2 tbsp olive oil
  • 1 2/3 cups celery, chopped
  • 2 (26 oz) cans diced tomatoes
  • 3 (15 oz) cans kidney beans, drained
  • 1/2 cup raisins
  • 1 tbsp chili powder
  • 1 tbsp parsley
  • 1/4 tsp salt
  • 1 1/2 tsp basil
  • 1 3/4 tsp oregano
  • 1 1/2 tsp cumin
  • 1 tsp allspice
  • 1/4 tsp pepper
  • 1 (12 oz) can beer
  • 3/4 cup cashews
  • 1 cup cheese

Directions:

  1. Saute in olive oil first set of ingredients (celery, peppers, onion, and garlic).
  2. Add second set of ingredients and simmer 1-1/2 hours (tomatotes, beans, raisins, vinegar, chili powder and other spices).
  3. Stir in third set of ingredients and cook 30 minutes more (beer, cashews, and cheese).
