Ingredients:

  1. Pre-soak the portabello mushroom slices in warm water for a couple of minutes. They will soak up a little water and have more body.
  2. Use a hot, non-stick wok.
  3. Brown the garlic and ginger.
  4. Add carrot slices and turn down heat
  5. Slice up the various remaining Chinese vegetables and add the stalk portions and lay the leafy portions on top.
  6. Add 1/4 cup of water and cover. If the top is vented, turn of the vent.
  7. Medium heat for 5 minutes.
  8. Stir thoroughly then cover and heat for another 2 minutes.
  9. Serve immediately.
