Ingredients:

Directions:

  1. Heat about 1and a 1/2 cups of water
  2. Throw in the whole spices,chillies, ginger and the vegetables [or you could steam all the vegetables first instead of cooking them in the water - but if you do them this way,the flavours of the vegetables gets in to the water and everything comes together well]
  3. Add salt to taste
  4. When the vegetables are cooked,mash a few of the potato pieces to thicken the stew
  5. Add coconut milk - [keep the flame on low]
  6. Don't let the coconut milk boil, when it simmers gently switch it off and cover with a tight lid to let all the flavours come together.
  7. Enjoy!
