Vegetable Stew Kerala Style

this is a delicately flavoured vegetable stew completely oil free that goes well with rice or thick slices of bread.
Ingredients:
coconut milk - 2 cups
potatoes - 3 large boiled and cubed
onions - 2 large - cut in large chunks
carrots, beans,cauliflower - a cupful cut in medium sized pieces
green peas - 1/2 cup
ginger - 1/2 inch - cut in strips
chillies - 2 cut in strips
green cardamom - 1
cinnamon - 1/2 inch stick
cloves - 2
salt
Directions:
1. heat about 1and a 1/2 cups of water
2. throw in the whole spices,chillies, ginger and the vegetables [or you could steam all the vegetables first instead of cooking them in the water - but if you do them this way,the flavours of the vegetables gets in to the water and everything comes together well]
3. add salt to taste
4. when the vegetables are cooked,mash a few of the potato pieces to thicken the stew
5. add coconut milk - [keep the flame on low]
6. don't let the coconut milk boil, when it simmers gently switch it off and cover with a tight lid to let all the flavours come together.
7. enjoy!
