Ingredients:

Directions:

  1. Chop all vegetables into large pieces
  2. Place eggplant on the bottom of a pot (can spray some PAM on it) then add other vegetables in any order
  3. Let simmer until soft
  4. Add tomato paste, mix, and season to taste
  5. Cook until all vegetables (especially the carrot) is soft
  6. Serve chilled
