Ingredients:

  1. Cook kielbasa in a large nonstick skillet over high heat, stirring occasionally, until lightly browned, about 2 minutes. Transfer to a plate.
  2. Add the oil to the skillet. Add onions, zucchini, bell pepper, garlic, cumin, oregano and salt. Cook, stirring, until onions are tender, 4 to 5 minutes.
  3. Stir in rice, beans and water. Cook, stirring, until heated through, about 4 minutes. Add reserved kielbasa and season to taste with hot sauce.
