Ingredients:

  • 2 cups wheat flour
  • 3/4 cup brown sugar
  • 1/4 tsp salt
  • 1 cup soy milk
  • 1 tbsp lemon juice
  • 1/3 cup oil
  • 2/3 cup blueberries

Directions:

  1. Go to /2008/02/brown-sugar-and-peach-muffins-spelt-challenge/ for directions
  2. Substitute blueberries for peaches
  3. Let recipe equal 8 rather than 12 (bigger muffin tins needed)
