Ingredients:

  • 3 eggs
  • 1 1/4 cups packed brown sugar
  • 1 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • 4 1/2 cups quick oats
  • 1/2 cup m
  • 1/2 cup toasted coconut (optional)
  • 1/2 cup caramel , bits (optional)

Directions:

  1. Preheat oven to 350.
  2. In a large bowl mix the eggs and sugars. Mix well.
  3. Add peanut butter, buuter, salt, and vanilla and mix well.
  4. Add the baking soda (if using a stand mixer, use mix (slow) setting), then add the oats.
  5. Stir in the m&ms, choc. chips, coconut, and caramel. I use an ice cream scoop (depending on the size half full) and place them on a slipmat on a baking sheet about two inches apart.
  6. Bake for 9 minutes.
  7. Leave on the cookie sheet for a couple minutes before rermoving to a rack or they will fall apart.
