Ingredients:

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cup sifted cake flour

Directions:

  1. Preheat oven to 375°F
  2. Cream until light butter, and sugar.
  3. Beat in egg, vanilla, and grated lemon rind.
  4. Add cake flour.
  5. Drop small amount of batter with a teaspoon onto greased cookie sheet.
  6. Bake 7 minutes or until rims are tan.
