Ingredients:

  • 1 cup shortening
  • 1 1/2 cups brown sugar
  • 1/2 cup white sugar
  • 1/2 cup nuts
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups pumpkin
  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 3/4 tsp baking soda

Directions:

  1. Preheat oven to 375.
  2. Cream shortening, brown and white sugars.
  3. Add eggs, vanilla, lemon flavoring, and pumpkin.
  4. Combine dry ingredients and mix together with shortening mixture.
  5. Bake for 12 minutes.
