Ingredients:

Directions:

  1. Slice squash into 1/4 inch wheels, and toss together with marmelade, coconut, oranges, carrots, and walnuts.
  2. For the dressing, whip olive oil, cream, and orange juice together for 2-3 minutes.
  3. Mix all seasonings together in a small bowl and add to the dressing.
  4. Chill salad and dressing.
  5. Toss dressing with the salad right before serving.
  6. May garnish with more walnuts, if desired.
