Turkey Kale Soup

Ingredients:

  • 2 oz scallions
  • 2 oz carrots
  • 4 oz kale
  • 8 oz mushrooms
  • 2 cups turkey
  • 5 cups broth (i6183)

Directions:

  1. Wash & slice scallions; peel & slice thinly ginger root and carrot
  2. Wash, trim & chop kale
  3. Wash & slice mushrooms
  4. Heat oil in skillet, add scallions, carrots & ginger root & cook for 2-3 minutes until they begin to soften
  5. Add kale & stir & cook until wilted
  6. Add mushroom and stir & cook for 2-3 minutes
  7. Add turkey and broth
  8. Taste & correct seasoning
  9. Bring to a boil; cover & reduce heat, simmer for 20 minutes until heated through
  10. Serve or freeze portions for later use.
