Tuna and Sweetcorn Jacket Potato With Green Salad

Ingredients:

  • 1 (220 g) can tuna, drained
  • 2 tbsp hellmann's mayonnaise
  • 1/8 tsp salt
  • 1/4 tsp sugar
  • 1/2 tsp butter or 1/2 tsp margarine
  • 1 large potato

Directions:

  1. Cook potato (with skin) in microwave for approx 10 minutes or until done (depending on size of potato).
  2. Meanwhile put sweetcorn and sugar in saucepan and bring to boil.
  3. Once boiled simmer for a few minutes;drain.
  4. Mix the tuna and mayonnaise together.
  5. Add the sweetcorn and mix some more.
  6. When potato is cooked, cut with knife through the middle 3/4 of the way (do not cut in half) and again the opposite direction making a cross pattern.
  7. Open slightly and place butter inside potato allowing to melt.
  8. Sprinkle a little salt over the potato.
  9. Spread tuna mix over and serve with a green salad.
