Ingredients:

  1. Prep Time does not include overnight chilling
  2. Place the walnuts, pecans and Brazil nuts in a single layer on a baking sheet.
  3. Bake at 350° for 4-8 minutes or until toasted and golden brown, stirring once.
  4. Cool on a wire rack.
  5. Line an 8-in. square pan with foil; grease the foil with butter and set aside.
  6. In a large heavy saucepan, combine the sugar, cream and corn syrup.
  7. Bring to a boil over medium heat, stirring constantly.
  8. Stir in the toasted nuts.
  9. Cook, without stirring, until a candy thermometer reads 238° (soft-ball stage).
  10. Remove from the heat.
  11. Stir with a wooden spoon until creamy and thickened.
  12. Quickly spread into prepared pan; cool.
  13. Cover and refrigerate for 8 hours or overnight.
  14. Using foil, lift candy out of pan; discard foil.
  15. Cut candy into squares.
  16. Store in an airtight container in the refrigerator.
  17. Yield: 2 pounds.
