  1. Enough oil or olive oil to brown sausage, pepper and onions. When they are browned add the paprika and garlic saute a minute and add water, tomatoes and chicken (taste for salt). Garnish with chopped green onions and chopped tomatoes if you like.
  2. Simmer till rice is done. Please don't overcook the rice this is not good with mushy rice.
  3. If you make a huge batch have a way to cool it down quickly or put in an ice bath, because this rice will continue to cook along time after you turn the fire off. After it is done you can fluff up with a fork, a spoon will break up the rice.
  4. Serve with garlic bread and a nice vegetable, a salad of fresh sliced tomatoes drizzled with balsalmic vinegar works well ( add some sliced mozzarella).
