Ingredients:

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Slice the tomatoes, squash, and zucchini into 1/4-inch thick round slices as uniformly as you can.
  3. On a cookie sheet or ovenproof platter, place a layer of squash, non-overlapping, then a layer of tomatoes, then a layer of zucchini.
  4. Mix all the dry ingredients and herbs together, then scatter them evenly over the top layer.
  5. Drizzle with the olive oil on top and bake until golden and crusty, about 25-30 minutes.
