Tomato Glut Sauce

Ingredients:

  • 1 1/2 cups coursely chopped carrots (optional)
  • 1 1/2 cups coursely chopped celery (optional)
  • 1 1/2 tbsp fresh thyme
  • 1 1/2 tbsp oregano
  • 1 1/2 tbsp basil
  • 1 1/2 tbsp parsley
  • 1 1/2 tsp salt (or less )

Directions:

  1. PREHEAT OVEN TO 400 DEGREES.
  2. PLACE ALL INGREDIENTS IN LARGE ROASTING PAN.
  3. ROAST FOR 45 MINUTES OR UNTIL VEGGIES ARE SOFT.
  4. BLEND BREIFLY IN FOOD PROCESSOR, BUT LEAVE SLIGHTLY CHUNKY.
  5. FREEZE IN 2-CUP PORTIONS.
