Tomato Basil Omelet (Low Carb)

Ingredients:

  • 4 eggs
  • 1 pinch salt
  • 3 tbsp butter
  • 1/4 cup tomato, diced
  • 4 tbsp butter

Directions:

  1. Crack the eggs into a bowl, add salt, and mix with a wire whisk.
  2. Melt the butter in a frying pan, and then add the egg mixture. tip the pan to let the eggs cover the whole bottom of the pan.
  3. Cook until the underside is lightly brown, and then scatter the tomato and basil over the omelet.
  4. Lift one side of the omelet with a spatula and fold it in half, then reduce the heat and cook for 30 seconds more.
  5. Use a spatula to slide the omelet onto a plate and serve!
