Tofu Cranberry Nut Muffins

Ingredients:

  • 1/4 cup soy flour
  • 1/2 cup oatmeal
  • 4 oz soft tofu
  • 1 egg
  • 1/4 cup oil
  • 1/4 cup honey
  • 3/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/8 tsp baking soda

Directions:

  1. Mix all ingredients until blended. Do not overmix.
  2. Fill 6 large muffin cups 2/3 full.
  3. Bake 375º for 15 min or until done.
